Peeps Cake and Cupcakes
As soon as I discovered this “Peeps Sunflower Cake” on Pinterest I knew I was going to make it with or without a kid. I’m so glad I have two little nieces that are ready and waiting to make anything with me. I had a blast watching them create their Peeps Sunflower Cake and Peeps Bunny Cupcakes. And by the looks of these photos, they had lots of fun too.
To make this a bit simpler I purchased both the chocolate cake and cupcakes from the bakery already iced. This way all Madelyn and Bellie had to do was decorate and I did not have to bake both a cake and an entire batch of cupcakes. Madelyn created her Peeps Sunflower Cake by following the instructions on the taste of home website. Click on the “Peeps Sunflower Cake” link at the top for their instructions.
Since Madelyn was making the Peeps Sunflower Cake I needed something for Bellie to decorate so I came up with this Peeps Cupcake Idea. Bellie decorated her 6 pre-iced cupcakes with 1/2 a cup of coconut I dyed green with food coloring (this was the grass), 1 Bag of M&M’s Speck-tacular Eggs Milk Chocolate (3, 4 or 5 candy eggs for the top of each cupcake, the amount depends on how many she felt like putting on at that moment) and 1 Package each of Peeps Bunnies in Pink and Purple. You will also need 6 toothpicks.
All Bellie did to decorate her cupcakes was put a layer of the green coconut on top of the icing, placed 3, 4, or 5 candy eggs on top of the coconut grass, then placed a toothpick in the bottom of a pink or purple Peeps Bunny and stuck the Peeps Bunny in the center of the cupcake. Super simple and so fun! She was so proud of her cupcakes and gave away all 6 that she made… she did not save one for herself. Of course no one could then eat theirs because her gesture was just so sweet.
