Chili anyone?

A few weeks ago my friend Rachael shared a Weight Watchers chili recipe that was so yummy. We have already had it twice. Well I was going to make some last night and totally messed up the grocery list. When Alan got back with what I sent him for I quickly realized I sent him on a wild goose hunt so I decided to just add what he bought and see what happened. Oh and I should tell you he had to go back to get 2 cans of diced tomatoes because I forgot to put them on the list… mind you I was reading the darn recipe as I was making the list. Not sure where my head was with this task but it clearly was not with making a list this is for sure. Anyway once I finally got everything into the pot oh my gosh what happened was something really good and I thought I would share it with you all. This is some serious comfort food.

Yummy...

Rachael’s recipe
Saute 10 oz ground turkey and 1 onion until browned.

Add:
(2) 28oz cans Diced Tomatoes
1 can Black Beans, rinsed and drained
(2) 15oz cans Beef Broth
4 stalk Celery, diced
2 Green Peppers, diced
2 med. Zucchini, diced
2 Yellow Squash, diced
1 pkt Chili Seasoning

Simmer for 30 min. Makes (20) 1 cup servings at 1 pt each.

My version
Saute 2 lbs. ground turkey and 1 onion until browned.

Add:
(2) 28oz cans Diced Tomatoes
1 14oz Bush’s Best Seasoned Recipe Black Beans, rinsed and drained
(3) 15oz cans Beef Broth
1 10oz Ro-Tel Chili Fixin’ Seasoned Diced Tomatoes
4 stalk Celery, diced
1 Green Bell Pepper, diced
1 Yellow Bell Pepper, diced
1 Red Bell Pepper, diced
2 med. Zucchini, diced
2 Yellow Squash, diced
2 pkts Medium Chili Seasoning

Simmer for 45 min.

Serve with Weight Watchers Mexican Style Shredded Cheese, Sour Cream, Sliced Jalapenos and Tostitos
(of course mine is NOT one point anymore if you add the toppings)

    It may not be worth one point to Weight Watchers, but the photo is worth 1,000 points… food photography is another whole arena for you!

    I agree…that is an awesome photo….yummy…and with the temps we have been having and are going to have soup, stews and chili are on the menu here at our house..and I will be adding the ingredients that I don’t already have on hand to my gorcery list…both sound yummy….

    Since my youngest son decided to get married a week before Christmas, I am woefully behind in reading my regular blogs. So I have some comment catching up to do.
    Ms Lisa you are a veritable paradigm of all things good. You are creative, talented, generous, warm, and funny. Cut yourself some slack indeed and learn to relax and enjoy the incredible human being you are. My tree got decorated at 2:00 Christmas morning and I actually finished 3 presents on Christmas day. And everyone had a wonderful time and so did I.

    So I tried this chili yesterday and wow, this was the best chili I have ever had. Super yum-o. My husband really enjoyed it to but I didnt tell him the ingredients, shhhh.
